I don't recall if one option is a better choice since you can use the notes to craft a mastery book, or use the same number of notes to craft 10 skill points. I generally went for the books since I had a lot of luck getting them in drops or loot.
Afterwards, I tend to go laborer for the benches and tools, security for horde nights, and round things off with the other classes as the mood strikes. As long as you loot crack-a-books, you'll get most basic skills that you need anyways, so it's rare to have a *need* for an ideal class lineup.
