In BG3 sneak attack is a diferent attack (has it's own button), so triggering attacks of opportunity/riposte (if you multiclass Battlemaster) sadly doesn't allow for one more Sneak Attack during the enemy turn. So basically you're stuck with one per round, not one per turn like in tabletop. #2.
