I have both the mild and medium. Quit cartridge razor's as I was getting bad razor burn on my neck to the point people were asking if I have been choked. I prefer the medium for my neck, but I started learning with the mild. Both will do you well and I think either should work. There isn't much difference in aggressiveness between the two.

I have been using mine as a daily shaver for a little over 60-days and it is great. Even my wife noticed that I no longer have red shaving bumps on my neck. And I came to my Henson AL13 after wet shaving with my Merkur 34C for over 10-years. I ended up with the Ti version as it is about 2x heavier than the Al.
Cost me around $30. Buy some soaps/creams, and learn how to lather. Find the facial prep that works best for you. There are tons of options, but don’t get overwhelmed! Pick something that gets good reviews and give it a go. You can add a safety razor now, or wait until you get comfortable with the lather routine.

Maggard Safety Razors are cheap and highly recommended for beginners. I strongly recommend this starter kit. The Parker 26C is exceptionally comfortable (disinclined to nick) and efficient, and at $29 is not out of sight. The Maggard razors will also work, as will the Edwin Jagger line, but the 26C, IMO, is better than either. All these ceramic bowls wouldn't last one bounce. They are pretty though. Suribachi (grinding bowl) are by far the most effective lather bowls. They are expensive though and try to get one bigger than 5 - 8 inches diameter. Terracotta bowls tied with marble bowls for second place on effectiveness.

If it's very hot or humid, I stay away from thicker, oily balms.
